  1. 1/2 kilo carne de puerco, entre trozo y costilla o parte que les agrade
  2. 6 chiles de la tierra o guajillo
  3. 3 chiles mirasol sustituir por chile ancho

  7. 1 cucharada harina
  8. al gusto Sal o caldo de pollo

  1. Asamos los chiles en un sartén con un poquitito de aceite, la cebolla, tomate y el ajo, lo ponemos en la licuadora con 3/4 de agua caliente, caldo de pollo o sal y la cucharada de harina, licuamos muy bien porque no lo vamos a colar, reservamos
  2. Picamos en trozos pequeños la carne retirando todo lo gordo (grasa)
  3. En una cacerola ponemos los gorditos de la carne y dejamos que suelte la grasa, los retiramos y ponemos la carne a dorar, si es necesario poner aceite para freír bien la agregamos, moviendo de vez en cuando para que no se pegue y se dore uniformemente
  4. Ya que este bien dorada retiramos la grasa a que quede la pura carne y agregamos la mezcla de los chiles dejamos hervir y bajamos la flama tapando la cacerola, dejamos hervir por unos 15 minutos, retiramos y servimos, acompañado por arroz, frijoles, spagueti o fideos, como lo hizo mi hermana
  5. Me gusta más el sabor con chile de la tierra o guajillo y chile ancho
